Directions

1Peel potatoes, cut into 8 equal pieces, and soak in water. Place in a heatproof container while still wet, loosely cover with plastic wrap, and microwave for about 4 minutes (600 W) or about 2 minutes and 20 seconds (1000 W).

2Separate broccoli into small bunches, wash. Place in a heatproof container while still wet, loosely cover with plastic wrap, and microwave for about 2 minutes (600 W) or 1 minute (1000 W).

3Cut boiled egg into 4 equal wedges, then cut each in half.

4Place potato and egg in a heatproof container, season with salt and pepper, and top with lines of mayonnaise. Bake in a toaster oven for about 10 minutes, until browned.
