Pork Shabu-shabu Udon Noodles with Deep-Roasted Sesame Dressing (Japanese Hot Pot-Style Sliced Pork with Udon)

This cold udon noodle salad is a great way to enjoy meat and vegetables together. The aroma of deeply roasted sesame combined with the creamy richness of the ingredients make this a mild and satisfying dish. We recommend adding shichimi pepper flakes to elevate the spiciness.

Directions
1Cook pork in simmering water, drain and let cool.
2Rinse lettuce in cold water, tear into bite-sized pieces. Cut mini tomatoes in half.
3Cook udon noodles according to the directions on package, then rinse under cold running water to cool, and drain well.
4Place udon noodles in a bowl, add soup base, toss to coat, top with pork, lettuce and tomatoes, drizzle dressing over the top.
5Add shichimi pepper flakes to taste.
Cooking Tip
Lightly cook the meat quickly in slightly simmering water (70–80°C/160–175°F) without boiling.
