Mini Tomato and Red Pepper Mayo Tartine

Sweet roasted mini tomatoes and red bell peppers go well with the richness of mayonnaise. The aroma of garlic accentuates the flavor.

Directions
1Cut baguette into 2 cm wide diagonal slices.
2Slice red bell pepper thinly. Slice mini tomatoes crosswise into thin slices.
3Spread grated garlic on baguette, top with red pepper and mini tomatoes, top with lines of mayonnaise, and bake in a toaster oven.
4Place baguette on a plate, sprinkle with chopped parsley.
Adjust toaster oven baking time accordingly.
